Ingredients

  • 1.5 lb Boneless chicken thighs
  • 2 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 1 Lemon (zest + juice)
  • 1 cup Low-sodium chicken broth
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Kosher salt
  • 0.5 tsp Black pepper

The Method

  1. 01 Season chicken with salt and pepper. Heat oil in a skillet over medium-high heat.
  2. 02 Sear chicken 4-5 minutes per side until golden. Transfer to a plate.
  3. 03 Reduce heat to medium, saute garlic for 30 seconds, then add broth, lemon zest, and juice.
  4. 04 Return chicken to skillet and simmer 10-12 minutes until cooked through.
  5. 05 Finish with parsley and spoon pan sauce over the top before serving.
